Manufacturing process

  1. Receive raw green bananas at the ripening plant at color stage 1.
  2. Pre-cool the product to a pulp temperature of 18 degrees Celsius.
  3. Introduce ethylene gas at a controlled concentration of 100-150 ppm inside the ripening chamber.
  4. Maintain required temperature, relative humidity, and ventilate chambers after 24 hours to remove excess carbon dioxide.
  5. Monitor ripening cycle over 4 to 8 days until desired color stage 3 or 4 is achieved for market dispatch.

Market

India is the largest producer of bananas globally, producing around 26 million MT annually. Modern ethylene ripening chambers are replacing traditional harmful calcium carbide methods, supported by government initiatives and subsidies through the National Horticulture Board.
