Raw materials & machinery

Manufacturing process

  1. Washing the King Chillies in clean water
  2. Drying the chillies using solar cabinet dryers or under sunlight
  3. Cutting the top and bottom portions of the chillies
  4. Curing the chillies in a brine solution for 2.5 to 3 days
  5. Mixing with edible oil, turmeric powder, salt, and other spices according to local taste
  6. Packing the finished pickle and dried chillies into bottles and plastic pouches for supply

Market

Pickles are a staple of Indian cuisine and are consumed year-round. Naga King Chilli, being one of the hottest chillies in the world, possesses massive potential for commercialization, especially in North East India and export markets, though currently at a nascent stage.
